I am a huge advocate of meal planning, not just from a weight loss perspective but also from a sanity and budget one. I literally couldn’t go into a week blind to what I’m going to be eating. So when I found out there was a link-up about exactly that, I couldn’t not get involved!
I’m also big on keeping things simple. So I have the same breakfast each day (oats, fromage frais and chopped banana, either microwaved or as overnight oats), my lunches throughout the week are leftovers from the night before, and weekend lunches are usually either soup of lentils, tomatoes and leftover veg, fry-ups tweaked to be healthy, or jacket potatoes with healthy toppings and lots of salad. I cook a meal each night though, and that is what my meal plan focuses on.
I’m trying to have at least one or two meals a week without meat, and I love pulses as a protein choice. I’m going to serve it up with carrot and parsnip mash, and spinach.
Jerk Pork with Roasted Butternut Squash
This is so simple, just a marinated meat with some garlic roasted butternut squash. And I’ll let you in on a secret – I use frozen butternut because I hate the time and effort involved in prepping a whole one! I’ll serve it with broccoli and green beans.
I love a curry flavour, and biryanis are one-pot wonders. I’ll serve it with some peas and asparagus.
Tuna Steaks with Ratatouille
I try to keep dinner light before weigh-in! I also try to eat fish/seafood at least one meal a week, so a simple steak with a nice side is delish.
A bit of red meat to help my iron levels! And I love the smoky taste of a goulash. As it’s Friday, a big side of sweet potato wedges will make this feel a bit naughty. I’ll fry up some mushrooms too.
Spicy Pork Rice
This goes down well for a lazy Saturday night, it’s kind of a meat paella. I’ll serve it with green beans and my boys’ favourite – corn on the cob.
Moroccan Chicken with Roasted Vegetable Couscous
We take turns with my in-laws to host Sunday dinner, but recently I’ve branched away from things like roasts. This is one of my favourites, I love Moroccan flavours and this is really simple to do.
Dessert is something we really only have on a Sunday, and I’m trying to find some slimming friendly options. There’s sugar-free jelly and lots of fruit in these.
